Soya chunks veg fried rice is a dish of cooked rice been stir-fried in a frying pan and is mixed with a variety of ingredients like some fried vegetables, eggs, soya chunks, chicken, or meat. This dish can be uniquely served by itself or it can be served as an accompaniment to some other dishes.

This dish is very easy to make and a delicious recipe, packed in flavors and can be made in just 30-40 minutes. If you are feeling lazy this weekend and don't want to go for a detailed meal then this dish is a perfect combo to go for you to enjoy your dinner in the comfort of your home.

  • Ingredients checklist

  1. Soya chunks
  2. Eggs
  3. pulao rice
  4. Cabbage
  5. Spring onions
  6. Onions
  7. Capsicum
  8. Peas
  9. Carrots
  10. Corriander leaves
  11. Salt
  12. Red chili powder
  13. Turmeric powder
  14. Pulav masala/Any masala powder
  15. Cooking oil
  • Procedure
  1.  Get the rice ready and keep it aside to cool it down. Cook the rice to such an extent that you can separate each and every grain of rice from one another. 
  2. Boil a handful of soya chunks or more if you like it.
  3. In the meantime, chop the vegies like Cabbage, capsicum, onions, and carrots but make sure they are chopped long and thin. Chop the spring onions in the form of rings.
  4. Squeeze and remove the excess water from the soya chunks.
  5. Heat a little oil in a pan and fry these soya chunks for 2-3 minutes. Keep these fried chunks aside on a plate.
  6. Now, heat some oil (3-4 spoons) in a pan. Add the onions and saute it well for a moment. Next, add carrots and saute for another 1-2 minutes. Then add the cabbage and peas and then fry the vegies to remove the rawness of cabbage.
  7. Alright, let's add the cooled-down rice and mix it well.
  8. Now, add the turmeric powder, red chili powder, salt to taste, and pulao masala powder (or any garam masala powder of your preference) and mix all the spices together well. Now add the fried soya chunks and mix them well with the rice.
  9. Now let the rice fry for around 5-8 minutes and keep turning the rice upside down with a spatula or a ladle.
  10. At last, garnish the rice with the finely chopped coriander leaves and the spring onions.
  11. For a deep-fried egg, heat a little oil in a pan and break an egg into the oil. Let the egg fry for 2-3 minutes until it's half fried (You may add salt and some spices to this egg) and place it on the fried rice.
  12. The dish is ready. Serve it hot with tomato ketchup or schezwan sauce.
