Smoked grill chicken (no barbeque or oven needed)

 

"Chicken is love!" It doesn't matter what dish it is, if it is chicken, then go on, I am ready for it. Let it be fried chicken, chicken curry, butter chicken, or my absolute love chicken biryani, I am always hungry for it. My friends can relate to this scenario, hahaha! I remember those days when I was in college, we were always craving a chicken biryani. What we needed was just an excuse, so we could go out to have an appetizing biryani. 

Well, let's talk about our today's dish now, Indian-style smoked chicken. Now whenever we hear smoked chicken, we imagine a giant smoker or a barbeque station, right? But let me be very clear at this moment itself that I haven't used any of this equipment for my dish. My cooking tools were simply a steel grill, charcoal, and three solid walls. Stay with me and I will discuss everything in detail in this blog.

Let's talk about smoked chicken. What is smoked chicken? Smoked chicken is nothing but chicken pieces marinated in an exotic coating of some rich flavored spices and this chicken is then smoked on the charcoal smoke until it is well cooked. And the end product is a drooling perfectly tendered, juicy, and savory dish with a very inviting look. Just talking about it is making me more hungry! 

Smoked grilled chicken without a barbeque or oven



Alright, let's talk about the setup now in detail. I have used a primitive cooking technique here. Just like I said before, I haven't used any equipment like a barbeque station or a smoker. I know they will provide you with better results for sure, but what can you do if you don't have one at your home. Well, here's what I did. I had a worn-out iron stove (Sigdi) at my home, So I picked up that, and apart from that you need a steel grill and firewood, that's it. And if you don't even have an iron stove at your home, don't worry at all! You may arrange three firm standing walls joined adjacent in a square shape with one side open. You may use bricks for standing these three walls. Trust me that works equally well too. And that's all about the setup.

Now, let's proceed to the ingredients.

  • Ingredients checklist
  1. 1/2 kg chicken (preferably chicken breast)
  2. Any refined oil
  3. Lemon
  4. Red chili powder
  5. Turmeric powder
  6. Tandoori chicken masala
  7. Ginger-garlic paste
  8. black pepper
  9. coriander powder
  10. Salt
We are ready with all the ingredients on the table. Let's proceed to marinate the chicken. 
  • Marinating the chicken
  1. Wash the chicken thoroughly and properly. You may brine the chicken as well but that's not mandatory. Remove all the excess water and place it aside on a separate plate. 
  2. Add 2-3 teaspoons of red chili powder (adjust according to the level of spiciness you can handle), 1 teaspoon of turmeric, 2-3 teaspoons of tandoori chicken masala or (any garam masala if the tandoori masala is not available), a pinch of black pepper, 1/2 teaspoons of coriander powder and add salt to taste.
  3. Add 1/4 cup of oil and mix all the spices well.
  4. Now, add 1 - 1.5 tablespoon of ginger garlic paste and squeeze a 1/2 lemon over the spice coated chicken pieces.
  5. Mix all the spice coating, ginger garlic paste, and lemon juice properly, the lemon juice helps tender the meat and makes it cook soft.
  6. Once done with all the above steps, transfer the chicken to a big enough bowl. Cover the lid with a plastic film or just cover it properly with a plate. Let the chicken rest and marination make its magic happen.

Alright, I assume we're done with 2-3 hrs of resting chicken with the marination.  Let's get going with the smoking procedure.
  • Smoking the marinated chicken
  1. Lit the firewood naturally using papers, twigs, etc. DO NOT USE ANY COMBUSTIBLE liquids because they leave a bad smell of their fumes.
  2. Once the firewood is lit properly (the fire must be very little), place the grill over, and before placing the grill, make sure to brush it with an oil well. This is important to avoid the mess over the grill at the end.
  3. Now, place the chicken pieces one by one over the grill and make sure there are spaces between the pieces. Don't place the chicken in a congested manner or else it won't cook properly.
  4. Once done with placing chicken over the grill, cover the grill with a dome-shaped cover and leave the chicken with the smoke for around 15 minutes and maintain the consistent lit firewood and coal being formed inside. Don't let the firewood lit too much, otherwise, the chicken will burn and you don't want it to happen, right? Maintain the amount of smoke because that's what gonna make the difference.
  5. Remove the cover after 15-20 minutes and turn the chicken pieces upside down. You will see a nice golden layer over chicken from the bottom. If you don't see it good, let it smoke for another say 5-8 minutes.
  6. Done with turning the pieces upside down? Now, cover it again and let it smoke for another 15-20 minutes. 
  7. Keep checking the chicken after 10 minutes and maintain a good amount of smoke inside.
  8. After around 30-40 minutes, the delicious and aromatic smoky grilled chicken is ready.
  9. Serve it hot with mint chutney.

The very first bite of this flavorsome chicken will put a massive smile on your face. This chicken with a burst of flavors, a rich aroma of smoke, soft, juicy, and perfectly tendered is enough to make your day. Don't believe me? Just try it yourself!!
